Homemade Recipes from Raw Milk and Dairy Products
With Lockdown in place and no sight of getting that removed, I learned many new recipes which can be made from raw milk and by-products.
There are lot many by-products that you can prepare from raw milk in the comfort of your home itself. Do not worry, today we will talk about some of the products here and you will see that how easy it is to prepare.
Let’s start with one of the items that are found in 70% of Indian households and you guessed right! It’s Butter or ghee. You can easily buy online best quality ghee of cow and buffalo from Doodhvale (online portal).
Making butter at home from raw and unpasteurized can be fun and easy. Let the cream of the milk float on the top from the raw milk you have with you. The simple process to get the cream is to refrigerate the milk for minimum 24hrs. Keep the milk in a wide mouth utensil without any lid. Observe the next day and you will find your layer of cream floating at top of the utensil. It is said that raw milk of winter will yield less cream when compared to raw milk of summers.
Use any ladle and skim the cream from the top and follow this process for a couple of days till you get a considerate amount of cream in a jar. If you need salty butter, you can add buttermilk in it or you can leave it to be.
If you are using buttermilk, make sure to let the mixture ripen for around 12 hrs in a warm environment. Now mix or churn the mixture in the jar till you see the layer of butter forming up at the walls of the jar. Once you see the layer, take a muslin cloth and a strainer and strain out the complete mixture carefully. Once the liquid is out, you will be left with pure butter. Once the straining is over, take the mixture left out in muslin cloth and keep it in ice water for around 5 minutes.
Now you will observe that all the tiny pieces of butter that were collected in the muslin cloth has been accumulated together. Now you can mix salt or any kind of flavor of your choice and transfer that butter to any jar for future use.
Let me give you some idea of which items you can mix in your butter to make it more flavorful.
1. Orange, Lime or Lemon zest for a tangy flavor.
2. Ginger or Garlic powder.
3. Parsley
4. Honey for a sweet flavor.
5. Chives
The lifeline of butter could be of around 2 months if kept it outside, but if you are considering freezing it then the life span could be increased to 6-12 months.
